    🇺🇸RED BOUDIN SAUSAGE: Load the massive cooking pot with cut up pork and water. Cook overnight. Debone and grind the pork. Season the pork to taste and cook. Add rice and pigs blood to the mixture. Stuff mixture into the sausage casing and then link the sausages. Poach to cook the blood.

    🇺🇸 CRACKLINS: Fry pork skin and fat into small pieces.

    🇺🇸 FROG LEGS & DIPPING SAUCE: Remove the skin from the frog legs and clean them using water. In a large bowl, mix cornmeal, flour, onion powder, granulated garlic and Cajun seasoning. Place the frog legs in the mixture, completely covering them. In a frying pan, add a bit of olive oil. Place the frog legs into the oil and allow to cook for 5 minutes on each side. For the dipping sauce, mix mayonnaise, ketchup, onion powder, granulated garlic and worcestershire.

      You should've asked to try some nutria! It's some of the best meat you'll find in Louisiana but you'll have to get it cooked in a home; you won't find it at a food stand.
      Also I have to say it's not that our food is about making a lot out of a little, it's about making a little bit to eat out of a lot. We have tons of resources and food animals, they just aren't the "normal" meat sources. I definitely wouldn't say we have "little" to work with when it comes to resources; enough Crawfish (ditch lobsters) live in my ditch to feed me for the season for free, I'd say that's almost the definition of plentiful.

                                          In Ireland we have a Black and White pudding. Again, the only difference is the addition of pigs blood. It's a very commonly used food traditionally with a breakfast or a "Brekky Roll" if your on the go.

                                                                                        My favorite boudin has to be from Kartchner's in Krotz Springs. Son, forget slapping your mama good, that shit will make you slap the whole damn family. Believe it or not, we actually got some pretty good boudin here in the Florida parishes too, like Jerry Lee's right outside of Baton Rouge. Then when it comes to things like boudin balls and wraps, we got a place here in Watson called Day's Smokehouse, their pepper jack cheese stuffed boudin balls will make your tongue jump out your mouth and dance..
