        Not gonna lie. I HATE the texture of cooked (especially baked) ricotta. I use cottage cheese in my lasagna. I know it’s taboo but 🤷🏼‍♀️

                                                  You need to oven the stew at 350 degree for 3-5 hours. The bechamel sauce needs half of nutmeg. Fresh mozzarella between each layer is a must as well.

                                                        I'm surprised with the cheese mixture, even my mom uses bechamel and she is a level 1! Don't think the lasagna with cheese mixture as sauce will taste a real lasagna.

                                                          I'm glad to live in Italy, cause a lasagna with garlic, ricotta, pecorino and random green things probably kill my sense of taste... The CLASSIC lasagna is bechamel, pasta, ragù, PARMIGIANO REGGIANO CHE SE NON LO AVETE È COLPA DI TRUMP ( not fake parmesan cheese) and nothing more...

                                                                                    As an autodidact whom lived in many cities across regions/states... Italian cuisine is so easy for me. I'm more the chef where I make and roll out fresh dough by hand. I also make my own bechamel and marinara sauces and often combine a third mix of beef/pork/lamb (especially for meatballs). Neither the amateur nor the home cook are wrong with their procedures, however, I find the home cook to be a bit obnoxious in her exclusivity.

                                                                                    Overall, I would have enjoyed it moreso if the lasagnas had uncommon ingredients such as eggplants, broccoli, cauliflower, chicken, lamb, pork, ham, steak, sausages, potatoes, artichokes, pumpkin.. I mean, the sky is literally the limit here in terms of ingredients and imagination.
