      Well Andrew Rea, I hate to critique you on this one but what you made there is the exact same thing that Epic Meal Time's Handle it made; The Universal Poutine. Don't get me wrong on that because I make it the exact same way they make it and how you made it here. And like you said not everyone has access to Cheese Curds the closest to it is Mozzarella Cheese. And Mozzarella works just fine for me.

                Since I know you are a big fan of Chef John I am a little disappointed that you didn't go his route and make the cheese curds yourself. Since this is a Basics video it would have been amazing to show how to make the gravy, but also the cheese curds yourself. I think you should redo this entire video, but at least make a Part Deux - it's poutine so I had to go french here - it's not that I totally hate this, but I had poutine in the only poutinery in Germany and they got cheese curds made from cheese makers in the local area and even after they poured hot gravy over them they still were squeeky, so if they can achieve that so can you.                                         Nope. That's not it. You need to layer the cheese curds between the fries so that it melts. It's important. Americans do this unmelted cheese and we Canadians just can't figure out why. You need to layer the cheese within the French fries in order for the fries to melt the cheese and make it stringy, then add boiling hot turkey gravy. That's turkey gravy with turkey fat. Add smoked bacon bits and parsley to top it off. And it's served in a bowl, usually a cardboard bowl or box, lol. That's the Canadian way.🇨🇦

                                                                      What is it gonna take for him to make a horseshoe from central Illinois? He did the nasty ass garbage plate. Now he did poutine, lets get some bomb ass Illinois food going...You need to eat this at 2 am, absolutely fucked up drunk, preferably after a wild night of Busch (heavy, in the can) and whiskey (7 and 7 or crown shots). The nasty grease hamburger and yellow can cheese sauce with frozen fry mixture is perfect. Homemade is preferred, while being cooked drinking Busch/Budweiser/whiskey/vodka/anything alcoholic because this entire rural state is full of drunks because this state is fucking awful and we hate it.... I have a bomb ass homemade cheese sauce recipe.

                                                                            Second, cheese curds are made with cheddar, not mozzarella!!!
